Who else out there didn’t even know about avocados until like twenty-five years ago? Avocado dip was definitely not ever on our menu when I was a child growing up in the Midwest.  Now, it’s everywhere and used in so many things.

They are charging a pretty penny for the addition of avocado to your sandwich at sub shops and healthier fast food places.  This avocado dip can be spread on wraps or your own sandwiches as a much healthier alternative to mayonnaise.

You can chop up avocado for salads, put it in smoothies, and of course, there is always the most common and favorite use for avocados which is guacamole.

I wanted something to dip vegetables in one day and I’d pretty much already eliminated most options for different health reasons.

A sour cream based dip is a typical choice that I used to make, but I’m cutting out dairy lately so that’s a no-go.

Then I was making a wonderful hummus dip for a while which I’ll post on another date, but that stopped being my go to dip because it contains lectins.  (Lectins cause inflammation basically.)

So the only thing left is guacamole but let’s face it, sometimes you just don’t want the onions for many reasons.  So this is just such a simple dip to prepare. Three ingredients, one bowl and two minutes to make. Why haven’t we all been making this for years?  Since I started making this avocado dip, I have been enjoying veggies so much more often too.  It’s just got a fresh citrus taste and everyone I have made it for has loved it too!

Ingredients:

  • 1 Fresh Ripe Avocado
  • Juice of 1 small lime
  • ½ tsp pink Himalayan crystal salt


Instructions:

Cut avocado in half, scoop out the inside with a spoon and place in a bowl. Smash with a fork. Add lime juice plus salt and continue mashing and mixing. It can be done at this point if you don’t mind it lumpy or if you want it really smooth put it in a mini food processor. Cut your vegetables into long sticks. I used mini carrots, cucumbers and celery. Bell peppers would be great too, or radishes even. Let me know what vegetables you ended up dipping and how you liked it in the comments.

Tip: Rinse all utensils immediately as avocado tends to stick to them and not come off entirely in the dishwasher.
