This Vegan Creamy Cauliflower Soup is so delicious! I can’t take full credit for this one, however. I originally got this recipe from Dr. Mark Hyman in his book The Blood Sugar Solution 10-Day Detox Diet. Now when you hear the word diet, you might think of calorie restrictions. This book doesn’t advocate low calories or low-fat, it focuses on restricting things that are known to cause inflammation and induce cravings, such as the biggest offender, sugar. The 10-day Detox Diet also has you cut out all refined flours. It’s meant to stop cravings in their tracks. Let me tell you it really does work.

No dairy, no worries!

I made this soup several years ago when I did try the diet. I am telling you the flavor is fabulous! What I love is that it is so creamy with out any dairy whatsoever. Dairy is one of the things not allowed on the 10-day Detox Diet. As I have mentioned in several other posts, I have abstained from dairy products before and let me tell you it really did make a world of difference in how I felt. This book is all about you feeling great. I won’t probably ever entirely give up dairy products because I am still a sucker for one of my own fabulous homemade desserts on a rare occasion. But I do try to come up with vegan alternatives as much as I can to help keep my own inflammation down.

 

Great for meal prep!

Last year I became a Certified Personal Trainer. Vegan Creamy Cauliflower Soup is definitely going to be on the list of things to share with my personal training clients. I like for my clients to prep their meals for the week ahead. This eliminates the chances that the person is going have a food emergency and be tempted to stop and get something at a fast food restaurant or just grab something out of the cabinet that isn’t healthy.

 

Tips for storing soup.

I have a wonderful tip that actually came from actress Jamie Lee Curtis. What she does, is she puts the soup into plastic zip top bags. Then she freezes them, lying flat on a small sheet pan. You freeze them and stack them up against the edge of the freezer and they hardly take up any space.  It’s pure genius! Thank you, Jamie Lee!

 

So good you won’t want to stop eating it.

The one warning I have about this soup is that it is so yummy that you just want to keep eating it. I’ve noticed it myself, and I had one person I gave the recipe to that made a batch of it and pretty much ate the entire batch within a few hours. That’s how good this is. So make some, have one bowl, and divide the rest of it up for your meal prep for the rest of the week. It would be wonderful at any holiday gathering too.

I made a few tweaks to the recipe so I guess I could have just tried to pass it off as entirely my own, but since almost every other recipe that I have on here is truly my own original creation, that certainly wouldn’t feel right to me. Plus I really believe in what Dr. Hyman is doing. So I am giving credit where credit is due.

 

Benefits of clean eating.

I hope my readers will give some of my recipes a whirl. I think anyone who feels like they don’t look their best will benefit from clean eating and even after a few months, they’ll probably start to look healthier.

Vegan Creamy Cauliflower Soup

Smooth blended vegan creamy cauliflower soup. Makes a ton and great for meal prep or your favorite holiday gathering.

Servings: 8 cups

Ingredients

  • 2 tablespoons Organic Extra Virgin Olive Oil
  • 1/2 medium onion diced
  • 1 clove Fresh Raw Garlic crushed
  • 1 whole medium cauliflower cut into chunks
  • 1/4 cup Raw cashews
  • 2 tablespoons Sesame Tahini
  • 1/4 avocado
  • 1 tsp Pink Himalayan Crystal Salt
  • 4 cups Spring Water

Instructions

  • Sauté diced onion in olive oil on medium heat until the onion is translucent.
  • Turn the heat down to low and add crushed garlic. Sauté that for 2 min.
  • Add cauliflower, 4 cups water, cashews, tahini and salt.
  • Bring to a boil, reduce the heat and simmer for 10 to 15 minutes or until the Cauliflower is fork tender.
  • Let cool 10 to 15 minutes.
  • Add avocado and transfer to a blender and purée the soup.
