Vegan Creamy Cauliflower Soup
Smooth blended vegan creamy cauliflower soup. Makes a ton and great for meal prep or your favorite holiday gathering.

Servings: 8 cups
- 2 tablespoons Organic Extra Virgin Olive Oil
- 1/2 medium onion diced
- 1 clove Fresh Raw Garlic crushed
- 1 whole medium cauliflower cut into chunks
- 1/4 cup Raw cashews
- 2 tablespoons Sesame Tahini
- 1/4 avocado
- 1 tsp Pink Himalayan Crystal Salt
- 4 cups Spring Water
Sauté diced onion in olive oil on medium heat until the onion is translucent.
Turn the heat down to low and add crushed garlic. Sauté that for 2 min.
Add cauliflower, 4 cups water, cashews, tahini and salt.
Bring to a boil, reduce the heat and simmer for 10 to 15 minutes or until the Cauliflower is fork tender.
Let cool 10 to 15 minutes.
Add avocado and transfer to a blender and purée the soup.
